That is both cute but knowing the story of Les MisÚrables, somewhat tragic too. The art is really good and emulates the show's style very well. It's quite a departure from the rest of your gallery. Nicely done.
I saw a French cartoon adaptation as a child and am reading the originals now but good heavens it's long.

Jean Valjean, the central figure of Les Miserables, was imprisoned for nineteen years for stealing bread to feed his family (and then trying to escape prison). Presumably, in the Ponyverse, the decision to do so was a defining character moment which earned him his cutie mark, although it could mean more "Will feed/save others no matter the result to himself" more than "Bread thief". This is reinforced by his continual saving of other people's lives throughout the story.
Cosette, his adopted daughter, is presumably curious about the mark and innocently presumes it to mean that her father was once a baker, as she is not aware of his past. As he has been living under an alias since before they met, and is still technically a wanted criminal, he does not want her to know the true details of his early life.
Thus, in the image, he is pretending that he was once a baker.
